But it's interesting to consider when they turn into proper nouns - when does a noun 'Katie's big sneeze' become a proper noun ' Katie's Big Sneeze'?

If you're asking when to capitalize events, then yes, historical events are always capitalized if they have specific names. Like World War II, the Crusades, Hurricane Katrina, the Battle of Such-and-Such, etc.
